This Wusthof Silverpoint channel knife is stamped from a single piece of high-carbon stain-resistant stainless steel. The handle is slip-resistant fiberglass-nylon. The channel knife is a garnishing tool that is used to cut strips of citrus peel for candied lemons or oranges. It is also used for making fluting cuts and other decorative cuts in fruits and vegetables. It cuts strips of the outside peel from oranges, lemons and limes, not cutting into the bitter white membrane. From Wusthof in Solingen, Germany.
