This Global paring knife has a 4" (10 cm) straight-edged blade. It can be termed a "sheepfoot" style blade or a "santuko shape" paring knife.
Global kitchen knives are crafted by hand in Niijata, Japan. The blades utilize molybdenum/vanadium stainless steel, ice tempered and hardened to Rockwell C 56-58 degrees to hold a taper-ground, razor sharp edge. The slim Global design aids mobility and is comfortable for the smaller hand. The handle is welded to make a totally seamless tool, and smooth contours assure the ultimate in hygiene. The textured handle gives a positive grip even when the hand is wet. Global knives were first designed in 1985.
