This Global Oriental Deba (Vegetable Sushi) knife has a 7" blade and measures 12-1/2" in overall length. The blade is beveled on one side only, for right hand use; the other side of the blade is concave ground for an extra sharp, extra thin edge.
Global kitchen and chef knives are crafted by hand in Niijata, Japan. The blades utilize molybdenum/vanadium stainless steel, ice tempered and hardened to Rockwell C 56-58 degrees to hold a taper-ground, razor sharp edge. The slim Global design aids mobility and is comfortable for the smaller hand. The handle is welded to make a totally seamless tool, and smooth contours assure the ultimate in hygiene. The textured handle gives a positive grip even when the hand is wet. Global knives were first designed in 1985.
