Product Description:

This forged Global 11"  (27 cm) Chef's Knife measures 16" in overall length.  Global chef knives are crafted by hand in Niijata, Japan. This knife is forged, which compresses the molecules of the metal and produces a heavier and more durable knife. The blade utilizes molybdenum/vanadium stainless steel, ice tempered and hardened to Rockwell C 56-58 degrees to hold a taper-ground, razor sharp edge. The slim Global design aids mobility and is comfortable for the smaller hand. The handle is welded to make a totally seamless tool, and smooth contours assure the ultimate in hygiene. The textured handle gives a positive grip even when the hand is wet.
