Sharpening Steels at Heimerdinger Cutlery

Sharpening Steels maintain the blade edge without grinding the knife blade away prematurely. Sharpening steels are not as abrasive as sharpening stones. A sharp knife has a very thin, very straight cutting edge. As the knife is used, the particle on the edge of the knife get wavy and curled over. The proper use of a sharpening steel straightens the edge, while breaking very few of the particles off the edge. Those that do break off are captured by the magnetic steel. Eventually, enough of the particles of the knife edge fall off that the knife is less sharp, and more aggressive means (sharpening stones) are necessary to put an edge back on the knife.
