Spiral replacement wire for the Ripple Gourmet Cheese Slicer, handcrafted by Kentucky Spring in Louisville, Kentucky. This spiral stainless steel wire comes on a card with directions for replacing the broken wire.
Basically, remove the round brass nut and remove the broken wire from the thumb screw. Loosen the anchor screw (located on the side opposite the thumb screw) about 1/4". Do not remove the anchor screw.
Remove the broken wire. Thread the new wire through the hole in the thumb screw and attach to the cheese slicer with 1/2 turn of the round brass nut. Bring the new wire across the slots in both posts, and wind the wire two full turns clockwise between the two washers on the achor screw.
Cut the exceess wire as close as possible to the anchor screw. Tighten the achor screw. Tighten the round brass nut.
A straight cutting wire may be installed using a stainless steel .020 guitar string. The size is stamped on the cheese slicer (also called a cheese cutter.)
